Christmas Cookies

Inspired by the Christmas Cookies
Every year, my family gather for a Christmas lunch at the In-Law's place. The lady spends over 3 days preparing a feast for around 45+ family members. It's a true blessing to be around the warmth of a loving family.
Since I missed last year's gathering, I've been extra excited about it this year. Everything was super special & super tasty and super everything. Even the folded napkins were super neat:)
So, what's a Christmas feast without  cookies? The delicious cookies that the daughter baked were perfect. Shaped as Gingerbread men, iced with white icing & decorated with some mini M&M's. The smell of them haunted me for a couple of days afterwards and made me wake up yesterday at 6AM to bake some.
The ingredient is simple to follow and items are easy to find. I got mine from  AlJazira;The supermarket that used to be my favorite spot for grocery shopping. Now, I continue to get lost between the allies.
Back to my cookies =) They turned out to be good. Not as amazing as the ones I had on Christmas lunch, but close. I think it's due to the strawberry icing that I used - it over powered the taste of the cookies. I should stick to the instructions shouldn't I? But, I find joy in giving things a twist to explore new possibilities.

Ingredients:
125g butter. At room temp
1/2 cup (110g) Caster Sugar
1 Egg Yolk
3 Cups(300g) Plain Flour
1 Teaspoon Bicorbonate Soda
1/4 Cup (90g) Honey
Steps:
Preheat oven to 180. Line baking trays with baking paper
Beat butter and suger together  then Add egg yolk and beat well
Fold in flour and add bicarbonate soda
Heat honey in microwave on high for 20 seconds then stir into dough
Cover in cling film and put in fridge for half an hour
Knead on lightly floured surface, roll out & cut
Bake 15-20 mins

Blog's First Post

Well Hello everyone reading my Blog's First Post.
I was told that the first few posts will be the hardest, from then onwards, words will flow easily. Let's hope it's true

I'd like my first offical post to be more of a promise to myself, that this little idea I have in mind will be given enough attention & effort from myside to see it grow into what I intend it to be.


I've been having many ideas on what my blog will look like, what topics will I be addressing and how much time & effort will I be able to dedicate. The answers to my questions are still not set - however, I should start somewhere & see where it might take me.

'Inspire me' - an invitation to all of you to inspire me & a vision I believe in that helps me improve & make a difference.

Inspirations are around us all the time. Even in the sadest moments. We only need to be ready for them to make a difference in the way we think, act or feel. How can we be ready you'd ask? & What difference does it make if I am inspired?
